White Rolls

I have used Soy milk and subbed one of the eggs with ground flax seed.  They still turned out great.


Easy, Fast, and Yummy Dinner Rolls

Makes 48
1 cup sugar
1 cup real margarine or butter
3 cups milk
1 cup hot water
4 eggs
11 cups flour
4 Tablespoons Saf Instant Yeast
4 teaspoons salt

Combine milk, sugar, margarine, and water. Heat in microwave until warm, about 3-4 minutes. Using a mixer with bread hooks, start mixing. Add eggs and half of flour. Mix well. Add yeast and salt, continue mixing. Add remaining flour. When mixed in, turn to high speed and let kneed for 11 minutes. When finished mixing, turn out on floured cloth and divide into 4 balls (for recipe for 48) Using rolling pin, roll first ball into a circle the size of a pizza. Using pizza cutter, cut circle into twelve wedges. To form a roll, take wedge of dough, fold in corners so they meet. Then roll up like a croissant. Place in greased pan (2 cookie sheets for 48 recipe. 9x13 size for 12). Let raise about 15 minutes, until puffy. Bake at 375 10-12 minutes or until dark golden brown. Optional: rub tops of rolls with a square of margarine.

This recipe is also great for sweet rolls. After mixing, roll dough into a rectangle. Spread two cubes (for 48 recipe) of softened butter on dough. And sprinkle with sugar and cinnamon or brown sugar and coconut. Roll and cut with string or dental floss about 1” thick. Place on greased pan close to each other so they will raise tall and not spread out too flat. Bake until dark golden brown. Frost when cool with cream cheese frosting—8 oz cream cheese softened,½ cup butter softened, and about 2 lbs powdered sugar, 1 teaspoon vanilla and enough milk to make a fluffy consistency

Pizza Crust a la Cooks

No rise pizza crust

3 1/2 C. flour
1 1/2 C. warm water
1 1/2 T. yeast
2 T. sugar
1 1/2 T. oil
1 1/2 t. salt

Add yeast to warm water and let grow. Then add all other ingredients. Mix well, knead extra flour by hand if needed. Roll out and add sauce toppings and cook at 350 for 20 - 25 minutes.

Be sure to poke crust with a fork to avoid large air pockets. I like to put butter around the edge of my crust to make it brown and keep it soft.

Makes 1 1/2 cookie sheets or 3 med pizzas.

Banana Nut Bread

Banana Nut Bread

3 bananas
1/2 C. marg. or butter
1 t. bk soda dissolved in 1 T. water
1 t. baking powder
1/2 C. almonds
1 C. sugar
2 C. flour
2 eggs beaten

Mash bananas add sugar, let stand 15 minutes. Add butter to bananas and beat. Add dry ingredients, soda and beaten eggs. Stir only until mixed. Bake in greased loaf pans at 350 for 50-60 minutes.

Delicious Bread Sticks

Delicious Bread Sticks

Combine in mixing bowl
1 1/2 C. hot water
2 T. yeast
2 T. honey
Let sit until it bubbles.

Add
1 t. salt
4-5 C. flour (I always use 4)
Knead in mixer 7-8 minutes

Roll out onto cookie sheet and butter the top. Use pizza slicer to cut pieces. Top with Parmesan cheese or garlic salt (if using garlic salt then butter after they bake also)

Let rise 15-45 minutes -- whatever you've got will be fine.

Bake at 400 degrees for 8-12 minutes.

Wheat Bread

6 C Hot Water
2/3 C Oil
2/3 C Honey
3 T Yeast
Mix above Then add:
6 C Flour
1 C 9 Grain Cereal
1/4 C Chopped flax Seed
1/8 C Chia Seed
2 Tbl. Gluten
2 Tbl. Dough Enhancer
8 C Flour Additional
Mix 11 minutes and then seperate into 5 greased loaves.  Place in cold oven.  Set oven to 350 degrees and bake for 35 minutes.

Zucchini Bread

3 Eggs
2 1/4 C Sugar
1 C Oil
3 tsp Vanilla
2 C Peeled, Grated Zucchini
3 C Flour
1 1/2 tsp Salt
2 tsp Baking Powder
1 tsp Soda
3 tsp Cinnamon
1 C Chopped Nuts
Beat eggs, sugar, oil, vanilla, and zucchini in mixer.  Add dry ingredients.  Pour into 2 large greased pans and bake at 325 degrees fro 55-60 minutes.

Potato Rolls


2 ½-3 Tbsp.
3 cups warm water
½ cup sugar
1 ½ Tbsp. salt
2/3 cup oil
1 cup mashed potatoes *
8-9 cups all purpose flour

Combine yeast, water, and 1 tsp. sugar in bowl & set aside. * Make instant potatoes by
combining 1 cup boiling water, 1 Tbsp. margarine, 1/8 cup milk & ¼ tsp. salt. Add scant
¾ cup instant potatoes. Combine sugar, salt, & oil in Bosch or equivalent mixer. Add
mashed potatoes. Add yeast mixture when foamy. Add 4 cups flour, mix well, then add
1 cup flour @ a time until dough is no longer extremely sticky. Knead in machine for 3
minutes. Place dough in Pam’d bowl. Turn over, coating both sides. Cover with towel
& let rise until doubled (appx. 45 min. – 1 hr.) Turn out onto floured surface (I use a
pastry sheet.) With floured hands, form dough into a little bigger than golf balls. Place
on Pam’d cookie sheet, placing 4 across. Cover & let rise until doubled in size (appx. 45
min.) Bake in pre-heated 400 degree oven for 10-15 min. or until medium brown. They
have to get brown enough to cook the inside of the rolls or else they’ll be doughy. Cool
on cooling racks. These rolls freeze very well. Just thaw rolls, then bake @ 375 degrees
appx. 5 minutes.

Yield: Appx. 3 dozen rolls
